The days are getting chilly and soup and stew weather is upon us. There is something about this time of year that makes it more comforting than any other time to enjoy a savory stew, flavorful soup or even a hearty chili.

I love to cook stews and soups this time of year. One of my very favorites that I grew up with, is Pasta Fagioli which means pasta with beans in Italian. It is a warm-you-up, stick-to-your-ribs, bowl of deliciousness.

This weekend I cooked a huge batch of it in my brand new Emile & Henry Stewpot. I love this huge 7 quart, red covered stewpot. It is big and that is good because being Italian we never cook a little bit of anything. I believe it had to be an Italian that coined the phrase “Go Big or Go Home”. We just always have enough for anyone that stops by. I have a big family, but stews and soups are so good the next day and even to freeze.

This huge stewpot is an entirely natural cooking vessel. This stewpot is part of Emile & Henry’s Flame® product line and can be used direct on heat  (gas, electric or halogen), in the oven, the microwave, even on the barbecue.  The cookware is highly resistant to thermal shocks and you can take it from the freezer and put right in a hot oven.

The cookware itself retains heat so your food stays hot longer. The cookware is wonderful for cooking simmered dishes like stews and soups but  recommended by word renown chefs to use when cooking caramel due to its even heat diffusion. This stewpot makes caramel quickly and easily. We are going to try that out as my husband has been going on about wanting to make a sea-salt caramel.

So you know you are cooking in total safety. There is no lead, cadmium or nickel in them cookware and so no risk of contamination when cooking. Since it is such an excellent heat diffuser as opposed to metallic cookware, it diffuses heat and does not conduct it. The cooking process is gentle and food does not burn, so you are left with the flavors of your food intact. Since it is such a great diffuser it performs well on lower temperatures. So very high temperatures are unnecessary and it is advised to start with low heat.

While my Pasta Fagioli was simmering I made a nice crusty round bread in my Emile & Henry Bread Cloche. You may remember when I showed you those last year. They are still one of my favorite kitchen items and the only way I make bread now!

When my Pasta Fagioli was done I served it with fresh grated Parmesan cheese and the fresh sliced bread. It was the perfect weekend dinner on a cold night for this family.

School starts for our kids next week. This week we are still enjoying the end of Summer. We even have a road trip planned tomorrow to 6 Flags! An easy way to have a great snack to fuel your kids after school is to get out whatever fresh fruit and veggies you have. I had pears, baby carrots, white seedless grapes and bananas. You will also want to add some crackers and those can be whatever your kids like. I used saltines and graham crackers.

Just grab some plates, cut up the fruit, add the crackers and put out an assortment of Dannon® Danimals® Smoothies for them to pick their favorite flavor! Easy Peasy right? Works with any fresh fruit or veggies and you can mix it up so they are never bored.

Five or Six Large Potatoes

1.5 Tbs of Extra Virgin Olive Oil

Sea Salt/Pepper To Taste

This is such and easy recipe, just peel the potatoes and cut into thick homestyle fries. Put the fries in the basket and coat with extra virgin olive oil. Cook in the AirFryer for 10 minutes. Take out basket shake and return to fryer to cook 10 more minutes.  Remove fries to plate and season to taste with sea salt and pepper.

Almond Flour Chocolate Chip Cookies

Recently I tried to adjust my favorite coconut oil, chocolate chip cookie recipe and substitute almond flour for white flour.  The problem was the cookies spread out way too much and were like crepes.  I added more almond flour and the second batch was better but still way too thin.  They tasted good though, so I know if I keep experimenting, I will come up with the solution.

In my search, I did find it would be best to chill the dough and I will try that next time.  In the meantime, I tried another recipe for Almond Flour Chocolate Chip Cookies and this one used baking soda instead of baking powder like mine and I decided to try it and chill the dough.  The cookies did not spread out but they did not take like a chocolate chip cookie like my first recipe.  The taste and texture is more like a macaroon.  They are very good, but I cannot believe there is such a huge difference in taste and texture.  This recipe almost tastes like flaked coconut was added.  Like I said, it is very good, just not what I would call a chocolate chip cookie.  I would refer to it as a chocolate chip macaroon cookie, lol.  Anyway, lets take a look at how we make these  and I will update with the other recipe and post pics of the first go round on that as well.

For my almond flour, I used the Morning Pep brand that is available on Amazon.  It is made from 100% all-natural Certified Gluten-Free by GFCO blanched almonds. The flour is ground very fine so it gives baked goods and sweets a rich flavor and moist texture, contains no preservatives or additives.  Morning Pep Almond Meal Flour is a great source of dietary fiber, Vitamin E, protein, iron, magnesium and calcium. Morning Pep Almond Flour is considered pasteurized by the USDA and The Almond Board of California.

Almond Meal Flour Chocolate Chip Cookies (More Like A Macaroon In Consistency)

Ingredients:

    • 1/2 cup butter, softened
    • 1/4 cup coconut oil, softened
    • 3/4 Cup Brown Sugar
    • 2 Teaspoons Pure Vanilla Extract
    • 2 Large Eggs
    • 1/2 Teaspoon of Baking Soda
    • 1/2 Teaspoon Fine Grind Sea Salt
    • 3-3-3/4 Cups of Almond Flour (dough was too soft with 3 cups so I added about 3/4 cup more)
    • 1-1/4 Cups of Semi-Sweet Chocolate Chips
    • 2/3 Cup Toasted Walnuts (Optional)

Instructions:

Preheat oven to 350 degrees F. Use a silicone baking mat or line your cookie sheet with parchment paper.

In your mixer bowl  cream the butter, extra virgin coconut oil and brown sugar. Next, add the vanilla and eggs and mix until blended.

Add baking soda and sea salt.  Add the almond flour one cup at time, beat well after each addition. I felt the dough was too soft after adding 3 cups of flour and gradually added more, I would say about 3/4 cup more.  Dough was still soft  but not as soft as before.

Add the chocolate chips and mix until incorporated in the dough, if you are adding the nuts, add them now and mix.

Chill the dough for at least an hour. Scoop with a small cookie scoop onto the lined cookie sheet and bake immediately for 11-12 minutes or until golden brown around the edges.  Let cook and remove to baking rack to cool thoroughly.  Yield about 3 dozen with the additional flour.

Baking Up #BigGameTreats With SNICKERS® & Skittles®!!!

The older I get, the more I can’t stand winter and in New York we are experiencing extreme, frigid temperatures.  The kind of dangerously low, temperatures causing our schools to close for!  We went into NYC this past Saturday and after going to the circus, I so badly wanted to walk with my husband and little ones on the streets of Manhattan, pick up some Italian pastries and show them the sites of the city that never sleeps.

However, literally a couple of blocks and we felt like we had frostbite so we ducked into a restaurant, had a late dinner and hailed a taxi to go back home.  Very disappointing.  It’s times like now I love when I see stores putting up spring displays and anything that makes January and the winter go faster.  Which is why when I went to Walmart to pick up some candy I needed for baking, I soaked in the spring merchandise on the shelves.

I am focusing on the next big event, we will be entertaining friends and family for the “Big Game” in a few weeks.  I love to bake and so I tried out some recipes this past weekend.  Who doesn’t love chocolate, caramel and peanuts?  Not any one I know, so I was excited to mix it up in the kitchen with SNICKERS®.  I first made some decadent, SNICKERS® Cupcakes.

Would you like to make these?  I knew you would.  First thing is to bake up some chocolate cupcakes.  I used just a boxed Devil’s Food cake mix and prepared and baked according to the package directions.

When the cupcakes are cool you make the filling by mixing milk, butter, soft caramels, chopped peanuts and marshmallow fluff.  You add milk, butter and caramels to a saucepan and melt on the stovetop over medium heat until melted stirring constantly.

Then add peanuts and marshmallow fluff to the melted confection and stir until everything is combined well.  Remove the mixture from the heat and allow to cool and thicken for approximately 30-35 minutes.

When you are ready to fill the cooled cupcakes, you cut out a hole in the middle of the top of the cupcake where the filling with go.  Then you can fill with a pastry bag and decorator tip all the cupcakes with the filling.

For the cupcake frosting I made a peanut Butter Buttercream by mixing butter, powdered sugar, vanilla, peanut butter and milk.  Put the frosting in a pastry bag and top all the cupcakes with the frosting.

Last I make a chocolate glaze by mixing confectioner’s sugar, cocoa powder and milk and drizzle the glaze over the cupcakes.  Top each cupcake with a half of a SNICKERS® Minis. Yum, these made the final cut and it was a unanimous decision that they will be found on our game day buffet.   If you want to try the list of ingredients is below.

Chocolate Cake Mix of Your Choice ( Prepare and Bake Cupcakes According To Package Directions)

 Cupcake Filling:

  • 3 Tbsp of Milk
  • 6 Tbsp of Butter
  • 8 Oz. Caramels
  • 1/4 Cup Marshmallow Fluff
  • 1/2 Cup Chopped Peanuts

Peanut Butter Icing

  • 1 Cup Butter
  • 4 Cups Confectioner’s Sugar
  • 1 Tsp Pure Vanilla Extract
  • 2/3 Cup Peanut Butter
  • 2-3 Tbsp Milk
Chocolate Glaze and Topping
  • 1/2 + 1/8 Cup Confectioner’s Sugar
  • 1 Tbsp. Cocoa
  • 1 1/2 Tbsp of Milk
  • 18 SNICKERS® Minis

SNICKERS® Stuffed Peanut Butter Cookies were the next treat on my baking agenda.  These are an easy peanut butter cookie that is stuffed with a SNICKERS® Mini.

First step is to make your cookie dough so cream butter, peanut butter, brown sugar and granulated sugar with your electric mixer.  Add egg, vanilla, milk, salt and baking soda and mix until completely combined.  Slowly add your flour a little at a time and mix until the dough comes together.  Chill your dough for at least 30 minutes.

Take your chilled dough and scoop out two tbsp. size  balls of dough, flatten slightly with the palm of your hand  and place a SNICKERS® Mini in the center of one of the flattened dough balls.

Top with the other slightly fattened dough balls and seal the edges and form into a ball.   Continue this process placing the cookies on a cookie sheet approximately 2″ apart.

Bake at  350 degrees F for 13-16 minutes or until they just begin to brown.

Cool 5 minutes on the cookie sheet and then remove them to a wire rack to cool completely.  Store the cookies in an airtight container or freeze them between layers of paper towels for up to 1 month.

SNICKERS® Stuffed Peanut Butter Cookies

  • 1/2 Cup (1 Stick) Salted Butter
  • 3/4 Cup Peanut Butter
  • 3/4 Cup Packed Brown Sugar
  • 1/4 Cup Granulated Sugar
  • 1 Large Egg
  • 1 Tsp Pure Vanilla Extract
  • 1 Tbsp Milk
  • 1/2 Tsp Baking Soda
  • 1-1/2 Cups Flour
  • SNICKERS® Minis (about 20-24)

Okay one more but we are going to appeal to those who are looking for something less chocolatey and more tangy.  For those guests I  tried a Skittles®  Drop Sugar Cookie.  Big thick, soft and chewy sugar cookies with a colorful mix of Skittles® are easy to make and oh so good.  The cookie even has a lemony, citrus flavor from the candy.  It was quite remarkable when I tasted that because I was surprised they would flavor the cookie itself but it was a delicious surprise.

I first made a drop sugar cookie batter.  Cream butter and sugar until light and fluffy then beat in one egg plus one egg yolk.  Add vanilla and mix well.  Then incorporate the flour, baking soda and cornstarch (first combine the dry ingredients ) and mix until well blended.

I used a cookie scoop to scoop out the dough onto a cookie sheet and then pressed in the Skittles® candies on top.  If you had a favorite team that was yellow and red, purple and yellow etc, you could use just those 2 colors to show your support for your team!

Bake the cookies at 350 degrees for about 12-14 minutes or until edges look set and just beginning to brown.  Remove and let cool on cookie sheet for a few minutes and then remove them to cool completely on a cooling rack.  This recipe makes about 24 large cookies.  See full list of recipe ingredients below.

  • 2 Cups Flour
  • 1 Tsp Baking Soda

Grilled Peanut Butter, Banana & Honey Waffle Breakfast Sandwiches With Aunt Jemima Frozen Waffles!!! #4MoreWaffles

I always think that the plan of getting up 20 minutes earlier in the morning will make getting the kids out the door less hurried and subsequently less stressful.  It makes perfect sense at night and I totally agree and would offer the advice to anyone.  However, when that alarm goes off and I am feeling particularly sleepy, knowing that I have the extra minutes can make me hit the snooze alarm a few times.  Now at the time, I think those extra minutes are so worth it, but when we are scurrying about trying to get everyone dressed and out to the bus stop in time and someone can’t find something they need, it hardly seems worth it.

I want my kids to not be stressed in the morning, so we make sure that we have everything ready to go the night before and that helps.  You know what else helps?  Having breakfast choices that are fast and easy.  That is why I keep Aunt Jemima Frozen Waffles in our freezer.  The resealable packs now come with  14 waffles instead of 10! Yeah for 4 more waffles and the resealable bag makes it easy to take what you need, leaving the rest sealed for freshness.

I buy mine from my local Shop Rite and they come in 4 different varieties; Homestyle, Buttermilk, Low Fat and Blueberry.  They are conveniently located in the frozen food aisle.

My kids love waffles and these can be heated in the toaster which makes breakfast on the go a breeze.  We usually just toast and serve with syrup,  fruit or fruit and yogurt on the side on school days.  However on weekends, we can go all out and cook sausage, eggs with cheese, Canadian bacon and of course have fruit and yogurt too.  A really special recipe for Grilled Peanut Butter, Banana & Honey Waffle Sandwiches is below!

My kids love a waffle sandwich that is made with 2 Aunt Jemima Waffles fresh from the toaster and with scrambled eggs with cheddar cheese, topped with Canadian bacon or pork roll and topped with another waffle.  They also like the waffles with syrup and a side of sausage.  So many great ways to eat them, you can use your imagination and indulge your taste buds.  As for me I’m glad I have something in the freezer that makes breakfast fast and satisfying for my kids.  Aunt Jemima helps me have one less thing to worry about on busy mornings and gives us something special to look forward to on weekend mornings.

Recipe Idea:

I want to share another way to serve Aunt Jemima Waffles that is super yummy!  What you need is 1/2  banana cut in slices, about 1.5 Tbsp of Peanut butter, 1 Tsp of honey and 2 Aunt Jemima Waffles of your choice.

Toast the waffles and then spread the peanut butter on both waffles, top one side with the honey and the other side with sliced bananas.

Put it together and grill it lightly in a pan with a little butter.  After grilling both sides remove, cut and enjoy!
